I choose the capuchin monkey for a couple of reasons. They can adapt to pretty much any biome. People even have them as pets, one adaptation the capuchin monkey has is that its tails are very flexible and can grab onto tree branches. They eat buds of plants and fruit lizards and little insects. The biome I can see the monkey adapting to is a grassland because they can still eat insects and bugs so I think they could adapt pretty easily.
