Ascorbic Acid, also known as Vitamin C, is a vinylogous acid which has a formula of Carbon 6, Oxygen 6, Hydrogen 8. Because it is a vinylogous acid, meaning that it has a stronger inclination to donate hydroxls, it is much more acidic than it might be otherwise. Ascorbic Acid is essential for humans as it provides help to the immune system, assistance in absorbing iron, helps to produce collagen and neurotransmitters, and assists in the removal of toxins from the body. Since Ascorbic Acid is water soluble and humans cannot produce or store it, we need to consume a lot of it. Foods such as kiwi, citrus fruits, bell peppers, broccoli, strawberries, pineapple, avocado, and kale contain large amounts of Vitamin C.
