Acetoin, also known as acetyl methyl carbinol is a natural flavoring substance. Its chemical composition is 3-hydroxy-2-butanone and the formula C6H8O2. It is made up of three different elements, carbon, hydrogen, and oxygen. This substance is used everyday. It is a colorless liquid with a butter like odor. Acetoin has a molecular weight of 88.11 g/mol, and a density of 1.012 g/cm cubed. The melting point for acetoin is 15 degrees Celsius, and the boiling point for it is 148 degrees Celsius. Acetoin is soluble in water, miscible with alcohols, and immiscible with fatty oils. It is made of glucose by fermentation. Acetoin is used in many products for their scents because it is an aroma carrier. It is usually used for personal care products like deodorant or perfume. It is also used for food flavoring and fragrance.
